Bites of My Life

A few travel delays, but made it home late last night after celebrating my oldest friend on her bachelorette party. It’s so wild living out moments that you only imagined as a kid. Getting old is w e i r d, but I wouldn’t change it! I got to spend about 24 hours in D.C (!!!!!) before heading down to Charlottesville for the scene of the crime (party)! I loved getting to explore this Virginia town that means so much to Anna.

-Trader Joe’s Gluten-Free Brownie mix is unmatched compared to most grocery store brownie mixes. My friend Reid brought a batch to our Bach finale watch party last week. And thank goodness she did because sustenance was necessary during that episode…
-Flower Child chicken plate w/ yuzu brussels and currently the green goddess asparagus is my go-to pick-up order when I have a short week and don’t want to buy a bunch of groceries.
-Made it to D.C. to kick off Anna’s bachelorette party and got the party started with homemade Jungle Birds made by her fiance, who doubles as my old high school friend!
-Followed by dinner at one of all of our D.C. favorites, Lapis. It is an authentic family-owned afghan restaurant that I highly recommend.
-Drove down to Charlottesville to really get the party started. A walk around campus and a morning run for the infamous Bodo’s bagels was necessary.
-My Bodo’s order - whole wheat bagel, feta spread, tomato, and sprouts. Excellent!
-We spent Saturday doing a wine tour, making stops at Pippin Hill, King Family and Veritas Vineyards. I’m not a huge wine drinker, but I loved have sips at each stop and indulging in the bread and cheese :)
-Anna reigned in such a good crew to be a part of her bridal party, and I had the best time with them all weekend.

Bites of My Life

I was forced to come back to reality after an amazing long weekend in Cabo San Lucas celebrating mi MaryKate. She gets married in a month and it was a seriously great kick-off to the countdown. We had sunny 70 degree weather, pool time, a beach day, delicious food and drinks, and made hilarious memories. This week hasn’t been so lavish, but I’m relishing in the down town before spending Easter with family.

-Still on the Blender Bombs train. it’s shocking how full these things keep me when I add to a smoothie for lunch. Annie10 gets you 10% off your order.
-Arrived in Cabo and it was an immediate change into swimsuit/start sipping on margaritas kind of mood!
-Felt like royalty having my man Sergio cook up some delicious meals. He made us fajitas, homemade pico de gallo, and the most decadent two-course breakfasts of french toast, ripe fruit, eggs, beans, bacon, fresh squeezed OJ, the works!
-Flora Farms, you were everything I dreamed of. We showed up to the sprawling grounds for brunch and snacked on farm-to-table salads, wood-fired pizzas, and this insane variation of hummuses.
-I’d be remised if I skipped over the cocktails. I opted for the mezcal pineapple and cilantro concoction and everyone else sipped down hibiscus margs.
-A seriously great bachelorette weekend for my bestie since 4th grade MaryKate!
-Ended the weekend tandem bike riding around Dallas with some serious gorgeous spring weather.

Last week was busy and breezed by quickly. Something I was in desperate need of. The quick work week came and went and then I was lake bound for the third weekend in a row to celebrate one of my besties Jordan at her bachelorette. It was a great last September weekend.

-Half Baked Harvest’s Kale Caesar has been on my list. Finally made it and it was everything and more.
-Healthy-ish Gluten-Free Pumpkin Muffins. Make them, I dare you!
-I love a behind the scenes moment. AKA baking these muffins at 8:00 in the morning and shooting them in good light next to my trashcan…
-French pastry date with my friend Ellie at Boulangerie.
-Passed through Austin over the weekend, and had to make an important stop to meet one of my best freind’s little guy!
-Weekend at Lake McQueeny to celebrate the cutest and sweetest bride-to-be.
-Just a girl and her HUGE swan.
-Trader Joe’s hearts of palm pasta, kind of weird, kind of great.
-Father of the Bride 3-ish premiered over the weekend. It was short, sweet, and just what I needed.

Things are picking up, things are feeling normal. I’m home from a bachelorette party for a wedding that will happen in less than a month. Something that seemed unattainable a couple of months ago. More restaurants are opening up, more people are out and it feels good.

-Golden Ratio sent me some of their coffee bags to try and I cannot get enough. It brews like tea and has this really smooth taste. They launch June 30th so keep an eye out.
-Started Jennie Allen’s ‘Get Out of Your Head’ with two of my best friends in Dallas. We are working through her online study of the book and it’s been the highlight of my week since we started.
-Did you catch last week’s recipe post? This salad is truly everything.
-These funfetti blondies by Elisabeth and Butter were a HIT on the bachelorette trip. I used GF flour and they came out great.
-Packed up my new Stoney Clover makeup bag for the weekend trip and had to snap a pic of how cute it was.
-A full weekend celebrating the best girl in the world. SB’s been my bestie since 1st grade and gets married in less than a month!
-Pretty epic lake cheese board if I do say so myself. Props to me and my cheesy sous chef Claire! Everything was surprisingly from Costco!
-Golden hour on the lake >>
-Greens and veg post chips, chips, and more chips.

Home from the most amazing bachelorette party in Vail, CO. Unfortunately I brought a cold home with me. Here’s a quick recap of my last full week of Whole 30, mountain time and the start of October!

-Tahini Chicken Salad hit the blog and my lunch last week. This no-mayo Whole 30 chicken salad recipe was a hit with more than just me. Y’all were loving it, and I love that.
-Currently still eating this Thai Pumpkin Soup because it made so much. Not mad about coming home from my trip with a meal already made for the week. I froze half this batch and thawed it over low heat.
-Going on a bachelorette trip while on Whole30 isn’t ideal, but the trip > w30. My plan of attack was to order best I could while out to eat, pack plenty of approved snacks, and indulge where I wanted. Here is a glimpse of my travel snack pack (which are all things I take even off W30): RXbars, pre-portioned bags of mixed nuts and plantain chips, Chomp sticks, almond butter packs, loose packets of tea and a few apples.
-Perks of accidentally booking your flight a day early, equals more time in Vail and a seriously good dinner at La Bottega.
-Followed by the famous hot chocolate at the Four Seasons. It was incredible, but so rich and TMI sent my weak stomach straight to the bathroom…This was not necessarily the first thing to dive into off Whole 30.
-The trees changing in Colorado this time of year was insane.
-Après naps (lol) cheeseboard time.
-Hiking aka trail walking in gorgeous Vail.
-Homemade za by moi for Saturday night in, in Vail. With tips I know from What’s Gaby Cooking, these supreme pizzas turned our perfect in the oven.
