Spaghetti Squash with Turkey Meat Sauce

I've officially eaten this meal three weeks in a row. Obsessed yes, overboard yes, but delicious enough to eat week after week.

Over the past few months I've loved getting plugged into a new community group through my church. They found out I had a food blog and quickly decided that a cooking class was a must. I easily obliged. We finished our study going over this book (which I love, have read twice now, and highly recommend) two weeks ago. We used last week's meeting as a time to have fellowship over food and conversation instead of our regular study. 

Sticking to what I know, I led a them through how to make this beloved new dish of mine, and paired it with Perfect CCCs of course!

Spaghetti Squash with Turkey Meat Sauce
yields 6 servings

Ingredients:
2 - 3 spaghetti squash, halved
1 pound lean ground turkey
1 tablespoon olive oil
2 medium zucchini, shredded
2 medium carrots, shredded
1 (15 ounces) can tomato sauce, no sugar added
1 (28 ounces) can diced tomatoes
2 cups raw spinach, tightly packed
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon ground cumin
Salt and pepper to taste
Dairy free or regular shredded mozzarella

Directions:
Preheat your oven to 425 degrees. Microwave each spaghetti squash for 5 minutes (this makes it easier to cut in half). Take out of the microwave and slice in half. Scoop out the seeds. Arrange spaghetti squash halves on a roasting sheet. Drizzle with olive oil and season with salt and pepper. Cook for 25-30 minutes.

While your squash is cooking, in a large pan over medium heat, cook the turkey in the 1 tbsp. of olive oil until almost completely cooked. When just a little bit of pink is left add the zucchini, carrots, tomato sauce, diced tomatoes, spinach and spices. Stir to combine and let cook until the spinach has wilted. Turn to low, cover and let simmer for 20 minutes. 

Once your spaghetti squash is done, use a fork to scrape the insides and create the β€œspaghetti noodles.” Layer a spoonful of sauce, draining some of the liquid of the sauce and using more of the meatiness, over the top of each squash. Turn on your broiler. Sprinkle the top of each squash with some cheese. Place under your broiler for 2 minutes to melt the cheese. Fresh cracked black pepper over the top and you are ready to serve!

*The sauce makes a ton. I like to pile on the sauce, but any leftovers store well in the fridge or freezer. When cooking for myself I prep one squash at a time and keep the sauce in the fridge. I take a cooked squash and the sauce and heat in the microwave. Then repeat the broiler step for a fresh hot meal each night.

Lite Bite: Peppermint Mocha Protein Shake

I've been toying with the idea of doing these "lite bite" posts. "Lite" as in quick or easy. I often come up with recipes on the fly or by accident. These recipes don't get a full camera roll of pictures, or a length story filled blog post, but still deserve to be shared. I mean, let's be honest, no one really reads blog posts anymore anyway. We al just  skip to the section with the recipe listed out. Or is that just me?

I'm going to start posting more "lite bites" when these quicky recipes work out! Enjoy.

Peppermint Mocha Protein Shake
serves 1

Ingredients:
2 scoops Arbonne Protein Powder, chocolate or vanilla
1 tsp. cacao powder* (only add if using vanilla powder)
1 tsp. coffee grounds
1 drop peppermint essential oils
shake of cinnamon
1 cup almond milk
1/2 cup frozen cauliflower
handful of ice

Directions:
Blend items together. Serve in a mug just like you would sip your favorite coffee drink out of!

Now why I love StudioHop... I've been doing StudioHop since February, and can't imagine working out with out. I'm a studio junkie. In a studio setting I find motivation having an instructor pushing me as well as getting to work alongside new or familiar faces who have the same goals. As compared to the intimidating solo act of maneuvering a gym.  

I'm also slightly ADD, so the ability to hop from one studio to the next, one workout to the next, day after day is ideal for me. Yoga one day, bootcamp the next, followed by pilates mid-week. Not only does this satisfying my spazziness, it's also great for your body. Studies have shown how changing up your workout creates results. You never want your body to get stagnant. Keep it working and challenged by changing up it's routine.

Because of StudioHop I am able to continue my practice of yoga, challenge my body at bootcamp and discover my love of pilates. I had never taken pilates until StudioHop and I'm not sure what took so long. Because of the access and luxury of being able to try so many different studios and workouts I was able to find this new workout (to me) and fall in love with it.

A few things to note about StudioHop...the studios included are not dog friendly, despite Gabe's impressive downward dog ;) You are limited to 5 classes per studio per month. Another thing to mention, if you cancel a class within 12 hours of it's scheduled time you will be charged a $12 late cancel fee. If you don't show up it's $15. My tip** don't sign up until a few hours before a class to make sure you will be making it. In OKC we have the luxury of classes typically not booking up fully so you can afford to sign up closer to time.

Bites of My Life

Last week was active, literally and figuratively. I always feel like my week gets off to a nice slow start then ends up going 100 mph by the end of the week. I have a feeling this week will be no different. A concert, roadtrip to Tulsa, multiple fitness classes, soccer game, lunches, dinners, and getting prepped for the week, I'm exhausted from the weekend and currently enjoying a nice slow Monday from the comfort of my living room.

-I somehow made my Perfect CCCs even more perfect, did you see the updates in last week's post?
-Elle's favorite nap spot is in Aunt Annie's arms. 
-Lake Street Dive at The Jones had me playing marketing manager by day, roadie by night. Please notice my walkie talkie making me look concert offish.
