Bites of My Life

And Best Picture goes to...I'm still confused. Anyone else deja vu-ing to Miss Universe 2015? Congrats Moonlight, but I'm still #teamLaLaLand. I'm honestly only team La La because it's the only Oscar nom I saw...oops. Shout out to Emma Stone, Bri Larson and Michelle Williams for best dressed in my book. Now time for sleep since these Oscars kept me up way passed my bedtime.

-Matcha Mint Smoothie oh how I love you so much. Ultimate post yoga remedy.
-The most adorable cheese board from the most adorable friend.
-Food and drink photo shoots for our new concept were on the work agenda last week. Keep up to date with The Jones Assembly here.
-Give me all the nuts (sans peanuts) and I'm a happy girl. The new mixed nut butter from TJ's is everything it should be.
-Photo shoots are so pretty and taste even better when you work in the restaurant industry.
-These kids are having a girl! Cheers to s'more girls!! #AuntieAnne is in full prep!
-I've been all about the acai bowls these days. My recipe is something like 1/2 acai packet, mixed frozen berries, 1/2 banana and a handful of frozen cauliflower. Yup that's right. Steam it then freeze it. Makes your smoothies or smoothie bowls extra thick and doesn't change the taste.
-Had a massive craving for Chae, luckily my family did too. Seriously good Korean comfort food, for those who haven't been.
-Spaghetti squash with sautΓ©ed mushrooms, tons of parsley and green onions. Dinner everyday last week and by the looks of it will be dinner this week too.
-My main side chick.
-A little late night pancakes never hurt anyone, or did it?...
-Lemon Cayenne Popcorn for Oscars viewing. Not pictured: charcuterie, crudite and hummus, artichoke dip, and churro puppy chow. There were four of us.

Bites of My Life

Summer well spent this past week. It was just the right amount of getting things done to then enjoy the off time over the weekend. Lots of summer eats and sips and recipes and other creations. Time was spent by the pool, at new workout classes, catching up with friends, deep cleaning and a combo of hustling while also relaxing.

-Mushroom tacos being continued from the week before.
-I used a lot of words and barely mentioned foods in last week's Sit Still post. Kind of nice to lay it all out there sometimes.
-The sweetest and tastiest delivery showed up on my doorstep last week from Tiny Boxwoods c/o BB Molly!
-Loved seeing last week's Sugar Cookie Pizza with Strawberry Icing already being made. Thank you @annmariedaniel!
-If you have a recent copy of Edible OKC, do yourself a favor and make the Strawberry Tahini smoothie bowl recipe!
-Smoothie bowl after smoothie bowl this week. So good on these 100+ days.
-A trip to a local farmers market called for picking up only local goods, like this Big Oak Blueberry Lavender Kombucha.
-Fresh farm tomatoes and eggs from the farmers market! I was on a quest to perfect a poached egg. I think I did by following these instructions.
-What summer Saturdays are made for.
-An afternoon poolside and a few too many club specials, led to a table full of burgers and fries to cap it off.
-Cooked, recipe tested and meal prepped all day on Sunday. One creation included this homemade jalapeΓ±o hummus!
-Easy way to drink more water: keep pitcher of fruit infused water in the fridge. This has been amazing this summer. My go-to is lemon and mint, but this week I have cucumber strawberry ready for me in the fridge.

Basic Granola

Granola could possibly be my favorite food. Actually I'm going to go as far and say it is. Probably not what you would expect to be a food obsessed's favorite food, but sorry it is. I eat it day and night, any time of day. My sister got me hooked on granola a while ago when she started making her own. I've been an addict ever since.

I love granola so much I'm that lame-o that will order the granola and milk or yogurt and granola on brunch menus. Typically the menu item everyone skips over. I love trying out new brands of granola and picking up a bag at local bakeries while I'm on vacations. I eat it by the handful, bagful, on top of smoothies, in yogurt, with almond milk and frozen berries, sprinkled in salads, I even eat it with cooked sweet potatoes. I'm actually planning on having that for dinner tonight.

Some of my favorite granolas include Purely Elizabeth, Michele's Granola (lemon pistachio flavor), and Hippie Crack from Baked and Wired. There are some great brands out there, but nothing beats making your own. I've waited forever to post this recipe because in all honesty I used to be the worst granola maker ever. I would burn it every time.

After a few years of practice I have finally mastered it. It's important to use the right measurement of every ingredient and make sure and stir your granola throughout baking. This isn't something you can put in the oven and walk away from. Granola is sacred in my world and burnt granola doesn't belong. Keep reading to see how to make your own!

Basic Granola adapted from A Peony For Your Thoughts

Ingredients:
3 cups of oats
1/2 cup cashews, chopped
1/2 cup pecans, chopped
1/4 cup sunflower seeds
1/4 cup flax seed
1/2 tsp. cinnamon
1 tsp. vanilla extract
2 Tbsp. olive oil
1/2 cup maple syrup
1 egg white

Directions:
Preheat the oven to 300 degrees. Line a roasting pan with parchment paper and set aside.

Mix the first six ingredients together in a large bowl. Stir in the extract, olive oil and maple syrup. In a small bowl whisk the egg white until frothy. Pour into the granola and mix until combined.

Spread the granola into an even layer on a parchment lined roasting pan. Bake for 30-40 minutes, stopping halfway through to stir the granola. Be very careful not to burn your granola. Mine cooks perfectly for 35 minutes. Stopping to stir after the first 20 minutes then baking the additional 15.

Feel free to use any nuts or seeds you want! Coconut and lavender are great additions. If you like dried fruit in your granola feel free to add it! Just make sure you stir it in once the granola is done baking.

I hope you love this recipe as much as me. Nothing beats the smell of homemade granola! If you make your own batch make sure and show me by tagging @_annietucker on instagram and using the hashtag #takeabite!
