Bites of My Life

Cassie and Colton, are we on board? I think I am. The only thing I’m hating is that my Monday’s are now empty without The Bachelor. However, tonight is the first of my friends and my book club! We’ve been wanting to start one for a while and over the past month we read Educated as our first book. Any suggestions on our next book?

-Spring has me eating and craving all the fruit. Apple and berries with a squeeze of lemon and ground flax on repeat for breakfast last week.
-Remember a few weeks ago when I accidentally died my hair strawberry blonde? Well, my sister/amateur hair colorist finally brought me back to my bright blonde roots.
-Spring also has me craving all the raw veggies. Veg and (double the) hummus for a working lunch on Friday.
-Thin Mint Brownies people.
-I had a r i p e avocado waiting for me to eat it. Sprinkle generously with EBTB seasoning for the best breakfast.
-They may be thin, but they are full of flavor. Thanks to my friend Miranda for letting me try out Thinsters. If you order, let me sway you in the direction of vanilla bean over chocolate chip.
-Lucky.
-Sweet and salty sourdough toast.
-Would you believe me if I told yo it’s gluten free and dairy free? Recipe coming this week!

Bites of My Life

Full in more ways than one. Thankful for so much delicious food over the past few days, thankful for a few days off, thankful for the joy this time of year brings, and thankful for QT with my family and good friends.

-Work Thanksgiving was a success! Fun afternoon getting our employees out of the restaurants and having our managers cook lunch for them. My sweet potatoes were on point, but apparently no one likes sweet potatoes but me…
-New traditions getting instilled and I love it. Sis and sister’s soon to be sis-in-law/our good friend Chloe and I all got together Wednesday to have a pie baking party.
-The Best Breakfast Casserole and our Tucker Thanksgiving and Christmas tradition of OJ with raspberries is how we started our turkey day. Not pictured: The Macy’s Thanksgiving Day Parade.
-Our family does Thanksgiving as a late lunch around 2pm, so appetizers are v important.
-Chloe, our stand-in brunette sister, missed you Claire!
-The fruits of our pie baking labor. There may still be leftovers in the fridge, but 5 pies seemed necessary at the time. Chocolate, cherry, pecan, pumpkin and apple!
-L E F T O V E R S (with some celery on the side to try to be healthy. Don’t be fooled though, this was only 1 of 3 servings of leftovers).
-Take a bite of my 1am nachos. I did a poor job documenting my Friday and Saturday nights, but they involved some really good friends and really good times. Hence the late night nachos ;)
-My beautiful Gaga went to heaven Sunday morning. She instilled my love for dressing up and costumes and helped my sisters and I develop the best imagination. I hope I have half her beauty at her age, and her fashion sense!

Bite of encouragement: There has been an influx of bad news being spread in my little community. Deaths, illness, cancer, you name it. However, there is something about this time of year that puts it all in perspective. This time of year also lends to extra time with family and friends when you need them most.

Lite Bite: Watermelon & Heirloom Tomato Salad

IMG_1359.JPG

Summer BBQ, party or potluck? Look no further than this recipe. I have a thing for watermelon feta salads because I actually already have two (here and here) recipes on my site, but this one. THIS ONE!!

IMG_1358.JPG

Watermelon & Heirloom Tomato Salad

Ingredients:
1/2 medium seedless watermelon, cut into small cubes
16 oz mini heirloom tomatoes (found at Trader Joe's), sliced in half
8 oz feta cheese block, cut into small cubes
olive oil
balsamic vinegar
flakey salt and fresh crackd pepper
small bunch of fresh basil

Directions:
In a large bowl gently toss cubed watermelon, cubed feta and sliced mini tomatoes. Drizzle over olive oil and balsamic vinegar. Not too much, you can always add more later. Sprinkle with fresh cracked black pepper and maldon salt if you have it. Any flakey salt will do. Tear the basil over the top. Tear instead of cut. Tearing will lend to better overall flavor and not brown the basil! Toss gently again and sprinkle a bit more salt, pepper and basil over the top to serve!

P.S. this makes great leftovers and is wonderful paired with grilled chicken (seen below).

Lite Bite: Mayo-Less Tuna Salad

IMG_1370.JPG

Tuna salad. Do you love it or does it make you gag? I'm on a HUGE kick right now and I'm real obsessed with my recipe so I had to share. It's free of mayo (EW) and gets tons of flavor from subbing in mustard. Makes for a perfect lunch that is satsifying and healthy!

IMG_1369.JPG

Mayo-Less Tuna Salad
yields 1 serving

Ingredients:
1, 5 oz can tuna packed in water, drained
1 tbsp. grainy mustard
1-2 tbsp. dijon mustard
1.5 tbsp. chopped pickles or relish
1.5 tbsp. diced red onion
salt and pepper
GG crackers, rice cake or bibb lettuce for serving

Directions:
Drain your can of tuna. In a small bowl combine all ingredients. Adding more mustard if you want it creamier. Serve with crackers, rice cakes or in little cups of bibb lettuce making it whole 30 compliant (as long as your mustard is sugar free! I like this brand, for obvious reasons)!
